Instructions
Cook time: 10 minutes
Remove bay leaf from pork; using half the pork, chop into 2-inch chunks; heat skillet over med-high, add pork + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp; set aside
Meanwhile, tear corner of rice to vent + heat in microwave 90 sec (careful—it'll be hot!)
In batches, heat 4 tortillas in skillet over med-high, 30 sec or until warm
Add pork to tortillas with avocado spread + divide between plates with rice on the side—looks good!
