Remove bay leaf from pork, then chop ½ the pork into 2-inch chunks; heat skillet over med-high, add pork + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp

Heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep 4-5 min or til soft + starting to brown

Stack 4 tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or til warm + soft

Add fillings to tortillas + dollop on 1 tbsp guacamole per taco
