Instructions
Cook time: 17 minutes
Preheat oven to 450°; peel + finely dice ½ onion; thinly slice ½ package of mushrooms; roughly chop 2 cups spinach; slice ½ cup tomatoes in half
Heat 1 tbsp oil in large nonstick skillet over medium; sauté diced onion + mushrooms with salt/pep, 2-3 min until soft; add spinach + tomatoes to skillet; sauté 1 more min until spinach starts to wilt
Pour eggs into pan, stir with spatula + cook 1 min; top with crumbled sheep cheese + season with salt/pep; cook frittata in oven 10-12 min until eggs are set
Carefully remove from pan, slice + enjoy!
