Cook time: 14 minutes
Tear corner of grains to vent + heat in microwave 90 sec (careful—it'll be hot!); if using a skillet, warm 2 min with 1 tbsp water
Meanwhile, heat 1 tbsp oil in skillet over med-high; pat chicken dry, season with salt/pep + cook 4-6 min per side until fully cooked, no pinkness remains + internal temp is 165°; slice + set aside
Cut all beets into quarters; peel orange + remove any white pith; cut along either side of membranes to release segments
Divide grains to bowls; top with chicken, beets, orange + crumble 2 tbsp cheese to each
