Cook time: 6 minutes
Heat lightly oiled skillet over med-high; pat chicken breasts dry + sear 2 min per side until warmed through, then slice + set aside
Meanwhile, toast 2 pitas until warm + golden; slice open pitas along seam
Add chicken + a handful of spinach to pitas, then drizzle on dressing
Tip: enjoy remaining spinach as a side salad with oil, vinegar, salt + pep
