Instructions
Cook time: 29 minutes
Preheat oven to 425°; pat carrots dry + mix with 1 tbsp oil + salt/pep; add to a sheet pan + roast 15 minutes; flip over + roast 10-15 min more until tender + browned
Meanwhile, heat 1 tbsp oil in a skillet over med-high; break chicken into bite-size pieces, add to pan + season with salt/pep + fave spices (we like garlic powder); sauté 2-3 min until hot + set aside
Heat a pot over medium; add ½ bag broccoli, ½ cup water, 5 tbsp alfredo + the leaves of thyme; cook covered for 6-8 minutes until hot, remove lid + cook for 5 min more; mash broccoli in sauce + set aside
Divide broccoli mixture between bowls; top with carrots + chicken
