Instructions
Cook time: 15 minutes
Using a meat mallet, pound steaks to ¼-inch thickness; pat steaks dry + season both sides with salt/pep
Whisk 2 tbsp eggs + ½ cup milk in bowl; whisk ½ cup pancake mix, seasoning packet, ½ tsp salt, ½ tsp pepper + ½ tsp smoked paprika (optional) in a 2nd bowl; dip steaks in this order: dry, wet, dry; coating both sides evenly
Heat ¼ cup oil over med-high in a skillet; cook steaks 3 min each side until crispy + golden brown; remove steaks + wipe out skillet
Melt butter in skillet over med until sizzling; whisk in 2 tbsp pancake mix until smooth then whisk in 1 cup milk, a little at a time while whisking continuously, until thick + smooth; season gravy with salt + a generous amount of pepper
Divide steaks to plates then top with hot gravy
