Cook time: 25 minutes

Preheat oven to 400°F; mix potatoes with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan; roast 20-25 min until tender

Meanwhile, heat 1 tsp oil in skillet over med-high; wash, then slice one zucchini into ¼-inch rounds, add to pan, season with salt/pep + sauté 3-4 min until tender; set aside

Heat lightly oiled skillet over med-high; pat pork tenderloin dry + sear 2-3 min per side until warmed through

Add everything to 2 plates + drizzle each pork tenderloin with 1-2 tbsp sauce—nice job!
