Instructions
Cook time: 10 minutes
Chop chicken thighs into ½-inch pieces + season with salt/pep; heat 1 tbsp oil in skillet over med-high + sauté chicken 5-7 min til fully cooked + no pinkness remains; turn off heat, toss with juice from ½ of lime + set aside
Meanwhile wash + dry cilantro, remove stems + roughly chop leaves; toss chicken with cilantro
Heat skillet over med-high + add rice with 1 tbsp water; stir occasionally for 2 min until warm
Divide rice to plates + top with chicken
