Cook time: 17 minutes
Heat 1 tbsp oil in skillet over med-high; add broccoli, salt/pep + sauté 4-5 min until lightly browned; add ¼ cup water, reduce heat, cover + steam 3-5 min more until tender; set aside
Wash one pepper, cut off stem + remove seeds, then cut into bite-size pieces; heat 1 tsp oil in skillet over med-high, add peppers to pan, season with salt/pep + sauté 4-5 min or until tender; set aside
Cut paneer into 1 in cubes; heat 1 tbsp oil in skillet over med + sauté paneer 2-3 min until golden; turn off heat + mix in 2-4 tbsp curry
Divide between plates
