Cook time: 11 minutes
Take steaks out of the fridge; unwrap + allow to sit at room temperature for 30-60 mins (Chef's Tip: this helps it cook more evenly + reduces surface moisture for a better sear)
In a small bowl combine 2 tbsp coffee, 1 tbsp brown sugar, 2 tsp blackening seasoning + a pinch of salt; rub steaks with oil + generously coat with coffee rub
Preheat grill to high + oil grates; grill steaks 4-5 min with closed lid, flip + grill 3-5 min more until charred + cooked through; rest 5 min then serve
