Heat 1 tsp oil in skillet over medium; thinly slice 1 onion + sauté 8-10 min until browned; season with salt + add 2 tbsp water; cover + cook 3-5 min until softened; set aside

Heat 1 tbsp oil in a skillet over medium; sauté chorizo 5-7 min until browned + hot; combine with onions

Add 1/2 cup hummus to each bowl + spread, flattening slightly, into a circle in the center of the bowl; toss rainbow veggies with chorizo + onions then add to bowls in a pretty pile atop hummus (drizzle with a little olive oil if desired) then dig in!
