Break up ½ the pork into bite-size pieces (save remaining for lunch tomorrow); heat a skillet over med-high + sear pieces 3-4 min, turning halfway through until meat is crisped + hot; mix in ¼-½ cup sauce, layer on 2 slices of cheese to meat + cover until cheese melts, 1-2 min
Toast 2 buns until warm + golden; divide pork to buns
