Instructions
Cook time: 12 minutes
Microwave potatoes in wrapper on high 6-8 min (caution, that's a hot potato!); carefully cut in half, then add to plates
Heat beans in a skillet over med-high or microwave in a covered, microwave-safe bowl 2-3 min until warm
Lightly mash tops of potatoes, then top with beans
Add 1-2 tbsp salsa + 1-2 tbsp sour cream to each potato—looks good!
