Cook time: 8 minutes
Heat 1 tbsp oil in a skillet over medium; sauté chorizo 5-7 min until browned + hot
Meanwhile stack 4 tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or until warm + soft; divide between plates
Wash scallions, thinly slice crosswise + discard roots
Fill each taco with chorizo; top with 1-2 tbsp sour cream + garnish with scallions
