Cook time: 10 minutes
Heat lightly oiled skillet over med-high; pat meat dry, season with salt/pep + sear turning every 1-2 minutes to brown 3-4 sides evenly (for more well done, increase cook time 1 min per side); let rest 5 min, then thinly slice
Meanwhile, cut onion in half from root to stem + peel; thinly slice 1/2 onion, set aside
Add spinach, meat + onions to a large bowl; sprinkle with 1-2 tbsp cheese, then toss to combine with a drizzle of olive oil/vinegar + salt/pep
