Instructions
Cook time: 20 minutes
Heat lightly oiled skillet over med-high; pat pork chops dry + sear 2-3 min per side until warmed through; set aside
Wipe mushrooms clean + thinly slice; heat 2 tbsp oil in a skillet over high, add mushrooms + cook undisturbed 3 min; sauté 3-4 min until browned + tender; add spinach + sauté 3-4 min until wilted; stir in ½ cup sauce, salt/pep + warm 1 min
Divide pork chops to plates + top with creamy spinach mushroom sauce
