Cook time: 18 minutes

Preheat oven to 450°; slice potatoes in half, mix with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan cut side down; roast 15-18 min until tender

Heat a lightly oiled skillet over med-high; pat meat dry, season with salt/pep + sear, turning every 1-2 min, to brown 3-4 sides evenly* (for more well done, increase cook time 1 min per side)

*The USDA recommends a minimum safe cooking temperature of 145°F for lamb

Boil a pot with ½ cup water + pinch of salt; place green beans in boiling water, cover + steam until tender, about 3-4 min; drain, season with salt/pep + a drizzle of oil

Heat sauce in pan 1-2 minutes then divide to plates with ingredients
