Instructions
Cook time: 4 minutes
Heat 1 tbsp oil in skillet over med-high, slice tofu nuggets in half + heat 1-2 min until warm + browned
Meanwhile, toast 2 pitas until warm + golden; slice pitas open along seam
Spread 1-2 tbsp curry in each pita
Add tofu + a handful of arugula to each pita (Tip: enjoy remaining arugula as a side salad with oil, vinegar, salt + pep)
