Instructions
Cook time: 29 minutes
Preheat oven to 450°; drain beans, then rinse + pat dry; toss with 1-2 tbsp oil, salt/pep + your fav seasoning (we like Garlic and Herb or Taco Seasoning); scatter beans on a sheet pan, roast 25-30 min, flipping 2-3 times throughout cooking, until beans are crisp on the outside but soft in the middle
Meanwhile, toast 2 pitas until warm + golden; slice pitas in half + divide between plates
Stuff each pita with a handful of rainbow veggie mix, top with crispy chickpeas + dollop 1-2 tbsp sauce each
