Ingredients
Instructions

Cook time: 20 minutes

Preheat oven to 425; cut potatoes in half then slice into 4 wedges, add to a baking dish with ¼ cup lemon juice, ¼ cup broth, 2 tbsp olive oil, ½ seasoning mix + salt/pep, cover + bake 45-60 min til tender; uncover + broil 2-3 min til browned

Line a sheet pan with foil for easy clean up; grate ¼ onion into a large bowl, add lamb, ½ packet seasoning, crumble in ¼ block feta + season with salt/pep, mix thoroughly; lay out 2 large pieces of parchment paper, add meat + top with second piece of parchment, roll out into ¼-inch thick rectangle (about 16x20") remove top paper, starting at 1 end, roll bottom paper tightly around meat creating a long spiral log (do not remove the parchment! this is creating the thin layers of meat we want); place seam side down + bake 15-20 min til cooked through

Wash + slice tomatoes in half, ¼ onion + lettuce leaves; toss with 1 tsp oil, a squeeze of lemon juice + salt/pep

Tear meat into bite size pieces; divide all to plates + dollop 2 tbsp sauce onto each
