Cook time: 15 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days
Microwave 2 sweet potatoes in their wrappers on high 6-8 min (caution, that's a hot potato!); carefully cut in half, then set aside on plates
Meanwhile, heat 1 tsp oil in skillet over med; add half the chicken to pan, break into small pieces + sauté 6-8 min until fully cooked + no pinkness remains; divide chicken + top potatoes
Slice 1 avocado; top each potato with ½ sliced avocado + 1-2 tbsp salsa
