Instructions
Cook time: 3 minutes
Wash + dry half package of peppers, then slice into bite-size pieces discarding seeds + stems; add to a large bowl
Enjoy edamame cold or poke a few holes in the film + microwave on high 1 min to warm; season with salt/pep; add to bowl
Crumble ¼-½ the cheese; add to bowl + toss all to combine
Divide ½ container of hummus into 2 bowls + spread, flattening slightly, onto the side of the bowls; divide veggie mixture to bowls + dig in!
