Instructions
Cook time: 17 minutes
Preheat oven to 450°; mix all potatoes with 2 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan; roast 15-18 min until tender
Meanwhile, heat 2 tbsp oil in a large skillet or pot over med-high + cook 2 packages broccoli with salt/pep 3-4 min, then add ½ cup water, cover + steam 3-4 min; set aside
Pat 2 packs of fish dry + season with salt/pep/fave spices; heat 1 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + in batches sear fish 3 min, flip + sear another 1-2 min (for well done cook 3 min on second side)
Divide all between plates; dollop each salmon fillet with 2 tbsp sauce—looks great!
