Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days; slice avocado
Preheat oven to 425°; chop cauliflower into 1-inch pieces, spread on a sheet pan, drizzle on 2 tbsp oil, seasoning packet + salt/pep; roast 10 min, flip veggies over + roast 5-10 min more til browned + tender
Meanwhile, heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep 4-5 min or til soft + starting to brown; set aside
Heat beans in a skillet over med-high or microwave in a covered, microwave-safe bowl 2-3 min til warm; divide all between bowls + top with sliced avocado
