Pat fish dry, season with salt/pep + your fav spices (we like garlic powder); heat 1 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + sear fish 3 min; flip + sear another 1-2 min (for well done cook 3 min on second side)

Meanwhile, microwave potatoes in bag, 6-7 min; let cool 1-2 min + chop into bite-size pieces

In a large bowl, toss spinach with dressing, then divide between plates

Top salads with potatoes + salmon—looks good!
