Cook time: 14 minutes
Chop turkey into bite size pieces (about 1/2-inch); heat 1 tbsp oil in skillet over med-high + cook undisturbed 3 min until starting to brown, flip + sauté 3-5 min more until fully cooked + no pink remains; save ½ the turkey for later
Meanwhile, microwave potatoes in bag, 6-7 min; let cool 1-2 min + chop into bite-size pieces
Heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep, 4-5 min or until soft + starting to brown
Add turkey + potatoes back into skillet; dollop with avocado
