Instructions
Cook time: 10 minutes
Wipe mushrooms with a damp paper towel, remove stems + scoop out gills; thinly slice, heat 1 tbsp oil in a skillet over med-high + sauté 3-4 min until tender; add salt/pep; set aside
Heat 1 tbsp oil in skillet over med-low + pour in the carton of eggs + salt/pep, then cook undisturbed until eggs around edges begin to set, about 2 min; continue cooking, using a spoon to stir eggs until curds form + no liquid remains, 2-4 min; remove from pan immediately
Heat 6 tortillas in skillet over med-high 30 sec
Add fillings to tortillas, dollop on avocado spread + fold
