Cook time: 27 minutes
Preheat oven to 400°F; break 2 packages of chicken into bite-size pieces, add to a bowl, mix in 4-6 tbsp chile + set aside
Stack 8 tortillas on a plate + wrap with a damp paper towel; microwave for 30 sec or until warm + soft
Divide filling among tortillas, roll up + place in a lightly oiled, baking dish seam side down; drizzle on remaining chile
Cover dish with foil + bake 10 min; remove foil + bake 10-15 min more uncovered until hot + bubbling; serve with 1-2 tbsp sour cream per enchilada—nice job!
