Instructions
Cook time: 8 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days; slice avocado
Heat skillet over med-high + add rice with 1 tbsp water; stir occasionally for 2 min until warm
Mix salmon with 1 packet of dressing + salt/pep
Wash scallions, thinly slice crosswise + discard roots; divide seaweed among plates; top seaweed with rice, salmon, avocado, scallions + a drizzle of dressing, then dig in!
