Instructions
Cook time: 22 minutes
Add potatoes to a large microwave-safe bowl, cover + microwave 3 min; stir potatoes, cover + microwave 2-4 min, then rest 2-3 min; mix in salt/pep, fave spices + 1 tbsp oil
Heat 1 tbsp oil in skillet over med-high + cook brussels with salt/pep 5-6 min until tender, stirring minimally; set aside
Heat a clean, lightly oiled skillet over med-high; rub 1-2 tbsp pesto onto each chicken breast + heat in skillet 1-2 minutes per side until warm
Divide everything between 2 plates—et voilà!
