Cook time: 25 minutes
Preheat oven to 400°F; mix potatoes + 2 bags of halved brussels with 4 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on 2 sheet pans; roast 20-25 min until tender
Meanwhile wash 2 packs of scallions, thinly slice crosswise + discard roots; set aside
Heat lightly oiled skillet over med-high; pat 4 pork chops dry + sear 2-3 min per side until warmed through
Divide veggies, potatoes + pork chops between two plates; drizzle potatoes with 1-2 tbsp sauce per plate + garnish with scallions౼nicely done!
