Cook time: 8 minutes
If avocado is too firm, ripen faster by placing in a paper bag, 1-2 days
Preheat grill to high + oil grates; slice zucchini in half crosswise then slice lengthwise into ½-inch thick planks; toss in 1 tbsp oil, salt/pep + grill 2 min per side with lid closed; meanwhile, peel then slice avocado in half; lightly oil flat side + grill for 1-2 min until it chars
Heat beans in a microwave-safe bowl 2-3 min in microwave until warm
Lightly toast 4 tortillas on grill, 1-2 min, flipping halfway though; divide all fillings to tortillas + drizzle with 1 tbsp sauce to each—looks good!
