Instructions
Cook time: 29 minutes
Preheat oven to 400°, wash + cut 2 peppers in half lengthwise then discard seeds; lay cut-side up in lightly oiled baking dish, season with salt/pep + bake 15-20 min
Meanwhile, heat 1 tbsp oil in skillet over high; add ½ the lamb to pan, break into chunks + sear 2-3 min; flip + season with salt/pep + 1 tsp seasoning, break into small pieces; cook 2-3 min; set aside
Heat 1 tsp oil in skillet over med; slice onion + sauté 8-10 min; season with salt; add ½ the lamb to onions + break up package of rice + add to meat
Divide fillings to peppers + top each with 2-3 tbsp cheese; bake for 10-15 min until melty—enjoy!
