Cook time: 14 minutes

Slice ½ pack of bacon into ½ inch pieces + thinly slice onion; heat a skillet over med + add bacon, cook stirring often for 3-4 min or until starting to crisp; carefully add onions with salt/pep + cook until softened + caramelized (we like to add 1-2 tsp sugar or honey at the end for a little sweetness)

Meanwhile, microwave potatoes in bag for 6-7 min; let cool 1-2 min, season with 1 tbsp oil, salt/pep/fave seasonings; divide between plates

Heat lightly oiled skillet over high; cook burgers with salt/pep 2-3 min per side until cooked through + no pink remains

Toast 2 buns until warm + golden; divide burgers to buns + top with bacon onion jam—yum!
