Instructions
Cook time: 8 minutes
Heat 1 tbsp oil in skillet over med-high; pat scallops dry, add to pan + season with salt/pep; sear undisturbed 2 min, then flip over + sear 2-3 min more until firm, opaque + cooked through
Warm up bean salad or enjoy cold
In batches, heat 4 tortillas in skillet over med-high 30 sec or until warm
Add fillings to tortillas, dollop on 1-2 tbsp guacamole per taco, then fold + enjoy
