Cook time: 11 minutes
Heat 1 tbsp oil in skillet over med-high; pat steak dry, season with salt/pep + sear 3-4 min per side for med-rare (for more well done add 1-2 min per side); for best results, use tongs to hold steak up on its fat side for 1 min to render fat crispy; rest 5 min + slice in half
Heat 1 tbsp oil in large skillet over med-high + sauté ½ of spinach + salt/pep 1-2 min; add the rest + cook 1-2 min more til wilted; dress with freshly squeezed lemon juice
Top steaks with herb butter on each plate + serve alongside spinach with a wedge of lemon for squeezing—looks good!
