Microwave 2 sweet potatoes in wrappers on high 6-8 min, flipping halfway through (caution, that's a hot potato!); carefully cut in half, then set aside

Meanwhile, pat pork chops dry + season with salt/pep; heat 2 tsp oil in skillet over medium, add pork + cook 3-4 min each side until cooked through; brush pork with 4 tbsp sauce + set aside

Heat 1 tbsp oil in large skillet over med-high; sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

Divide pork between plates with spinach + potatoes—looks great!
