Instructions
Cook time: 14 minutes
Heat lightly oiled skillet over med-high; pat chicken dry + sear 2 min per side until warmed through, then slice + set aside
Heat 1 tbsp oil in skillet over med-high + cook ½ bag of brussels with salt/pep 5-6 min until tender, stirring minimally to ensure browning; set aside
Heat a clean skillet over med-high; in batches, heat 4 cauliflower sandwich thins 1 min per side or until warm, then add to 2 plates
Spread 1 tbsp pesto per cauliflower thin, then top with chicken + brussels—time to eat!
