Microwave 2 sweet potatoes in wrappers on high, 6-8 min, flip halfway thru; carefully scoop out flesh, mash with a fork + mix with salt/pep + 1 tbsp oil (or butter); divide to bowls

Meanwhile, heat 1 tbsp oil in skillet over med-high; add half of chopped broccoli, salt/pep + sauté 4-5 min til lightly browned; add 2 tbsp water, reduce heat, cover + steam 3-5 min more til tender; divide to bowls

Drain broth from chicken packet; heat 1 tbsp oil in skillet over medium; add chicken to pan, break into small pieces + sauté 2-3 min til browned; turn heat to low + add sauce packet; cook 1 min til sauce is hot; divide to bowls then garnish with chopped scallions—yum!
