Cook time: 15 minutes

Add potatoes to a large microwave-safe bowl, cover + microwave 3 min; stir potatoes, cover + microwave 2-4 min, then rest 2-3 min; mix in salt/pep, fave spices (we like garlic powder) + 1 tbsp oil

Pat pork chops dry + season with salt/pep; heat 1 tbsp oil in skillet over medium, add pork + cook 3-4 min each side until cooked through, no pinkness remains

Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

For butter sauce, remove protein from skillet; turn heat to low, then add butter and cook until starting to bubble, add juice from lemon + salt/pep then turn off heat

Divide all to plates then top pork with butter sauce
