Cook time: 20 minutes

Preheat oven to 450°; slice potatoes in half, mix with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan cut side down; roast 15-18 min until tender

Pat pork chops dry + season with salt/pep; heat 1 tbsp oil in skillet over medium, add pork + cook 3-4 min each side until cooked through, no pinkness remains

Heat 1 tbsp oil in skillet over med-high + cook brussels with salt/pep 4-6 min until tender, stirring minimally to ensure browning

For butter sauce, remove protein from skillet; turn heat to low, then add butter and cook until starting to bubble, add juice from lemon + salt/pep then turn off heat

Divide all to plates then top pork with butter sauce
