Cook time: 15 minutes

Microwave potatoes in wrapper on high 6-8 min flipping over halfway through cook time (caution, that's a hot potato!)

Pat fish dry + season with salt/pep + your fav spices (we like garlic powder); heat 1 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + sear fish 3 min, flip + sear another 1-2 min (for well done cook 3 min on second side)

Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

For butter sauce, remove protein from skillet; turn heat to low, then add butter and cook until starting to bubble, add juice from lemon + salt/pep then turn off heat

Divide all to plates then top fish with butter sauce
