Cook time: 4 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days; slice avocado
Heat a clean skillet over med-high; working in batches, heat 4 cauliflower sandwich thins 30 sec per side or until warm, then add to 2 plates
Spread 2 thins each with 2 tbsp hummus, a handful of spinach then layer with avocado; top each with a second thin + divide to plates
