Cook time: 4 minutes
Tear corner of rice to vent + heat in microwave 90 sec (careful—it'll be hot!); if using a skillet, warm 2 min with 1 tbsp water
Meanwhile, wash + slice tomatoes in half
Add arugula to a large bowl + 1 tbsp oil, lemon juice + salt/pep; toss + set aside
Divide rice to 2 bowls; top with chicken, tomatoes + arugula
