Heat a lightly oiled skillet over med-high; pat meat dry, season with salt/pep + sear undisturbed 2-3 min until browned; flip meat over + sear 2-3 min more for medium-rare, set aside

Wipe mushrooms clean + thinly slice; heat 1 tbsp oil in a skillet over high, add mushrooms + cook undisturbed 3 min; sauté 3-4 min until browned + tender, season with salt/pep + set aside

Heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep 4-5 min or until soft + starting to brown

Add meat + mushrooms back into the skillet + lay 2-4 slices of cheese on top; cover skillet 1-2 min until cheese is melted, then divide between plates
