Instructions
Cook time: 35 minutes
Preheat oven to 350º + spray an 8x8 baking pan with cooking spray
Coarsely chop spinach; add eggs, spinach + salt/pep to baking pan + whisk; bake 10 min then sprinkle ½ cup cheese evenly over eggs; bake 15-20 min more until the eggs are fully set + cheese is melty
Allow eggs to cool slightly then cut into 6 squares
Toast 6 muffins + top with an egg square + a squeeze of hot sauce (Sandwiches will keep in the refrigerator for up to 5 days or freezer for up to 1 month)
