Instructions
Cook time: 8 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days; slice avocado
Boil large pot of salted water, add ½ the bag of couscous + stir; cook 5 min, then drain; add to a large bowl, drizzle with 1 tsp oil + season with salt/pep; divide to bowls
Drain + rinse beans; toss in your favorite seasoning or sauce (we love harissa or red pepper flakes)
Wash tomatoes + cut in half; thinly slice onion; divide avocado, tomatoes, onions + chickpeas between bowls; season with salt/pep, a drizzle of olive oil + lemon juice
