Instructions
Cook time: 10 minutes
Heat 2 tsp oil in a skillet over med-high; drain 2 packets of chicken, break into bite-size pieces, add to pan + sauté 3-4 min until hot; set aside
Meanwhile, tear corner of rice to vent + heat in microwave 90 sec (careful—it'll be hot!); divide between bowls
Heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep 4-5 min or until soft + starting to brown; divide between bowls then top with chicken + a dollop of avocado
