Preheat oven to 400°F; wash then cut 2 peppers in half lengthwise + discard seeds; lay cut-side up in a lightly oiled baking dish, season with salt/pep + bake 15-20 min until peppers are tender but still hold their shape

Meanwhile, chop ¼ cup spinach

Remove peppers from oven, divide spinach among peppers, then pour about ¼ cup eggs into each pepper half (don't overfill!) + season with salt/pep; sprinkle 1-2 tbsp cheese onto each pepper and carefully return to oven; bake 15-25 min more until eggs are set + cheese has melted—woah, that looks so good

Tip: enjoy remaining spinach as a side salad with oil, vinegar, salt + pep
